For the Read family, making aged cheese comes with daily tests of perseverance, problem solving, and, above all, patience.

All of which have been challenged mightily in the two years since they announced plans for a neighborhood deli and cheese shop across from Longfellow Park. But now, after a series of delays and runarounds, the rind has finally formed on their efforts – and they plan to open September 1.
